Whether you’re throwing a watch party or hosting a tailgate, check out this bean dip recipe that’s sure to be a hit at your next football get-together.
1 can black-eyed peas (rinsed and drained)
1 cup corn
2 avocados, diced
1/2 cup chopped green onion
1/2 cup chopped fresh cilantro
1 cup chopped tomatoes
1 cup corn
1/4 cup red wine vinegar
1/4 cup olive oil
1 teaspoon ground cumin
1/2 teaspoon minced garlic
Salt and black pepper to taste
More of a salad than a dip, this avocado, black-eyed pea dish is perfect to eat by itself or with your favorite tortilla chips. Start making the dish by combining the vegetables together. In a large bowl, combine the black-eyed peas, corn, tomatoes, avocado, green onion, and cilantro. Mix the ingredients together until they’re thoroughly combined.
In a separate bowl, mix the seasoning sauce. Combine the vinegar, olive oil, cumin, garlic, salt, and pepper. Once they’re thoroughly mixed, then you can add the mixture to the vegetable bean mix. Toss the salad. Once it’s well coated, cover the salad and refrigerate for at least an hour. Once it’s ready, serve with your favorite sides and enjoy watching the game with family and friends.
